At Braise we understand that you want everyone to enjoy your big day as much as you. We offer several options to correspond with your vision. Please keep in mind that these are sample menus and service guides, we welcome custom menus and any input that would make this day yours.

 

Seated Dinner

This option is considered the most formal style of dinner reception. Each plate served individually characterizes the seated dinner. This option often has the most elaborate presentation and wow factor.

           

Buffet Style

A buffet is a more relaxed approach to your dinner reception. A buffet offers your guests a greater variety in food selection and a chance to socialize at the buffet tables.

           

Family Style

Family style dining is a more formal style than the buffet presentation without compromising the wow factor. It also offers your guests a larger variety, stimulates conversation and interaction.

 

An important aspect to keep in mind is a your guests’ pallet. When choosing your dishes, try to make selections that will please many of your guests, you want this day to be memorable for everybody. The following sample menus include a classic option, which is familiar to many people. A contemporary menu is also provided which represents current trends with assertive flavor profiles.

 

The Classic

Chicken Marsala

        Grilled chicken breast, egg noodles, broccoli florets, Marsala sauce

        Roast Beef

Thick sliced, medium rare prime rib, garlic mashed potato, asparagus spears, au jus  

        Salmon

Grilled salmon, rice pilaf, green beans, lemon sauce

 

The Contemporary

        Chicken

Roasted chicken breast, grilled rosemary polenta, chanterelle mushrooms, black pepper ver jus

        Short Rib

Barolo & leek braised short ribs, celery root puree, chervil butter poached carrots

        Pork Chop

Bone in, Dijon rubbed pork chop, sage buttered potatoes, grilled brocollini, prosciutto crisps

        Salmon

Grilled organic salmon, fingerling potato lyonnaise, roasted cremini mushrooms, sweet pea puree
